Barley and rye are often categorized as 'minor cereals' because they are not as frequently consumed as 'major cereals' like wheat, corn, rice, and oats. However, nutrition experts emphasize that these 'minor' whole grains should be included more prominently in our diets due to their substantial health benefits.

In recent years, the popularity of cereals has surged, contributing positively to public health. Secalins in rye

The prolamin proteins in rye are termed secalin proteins (equivalent to wheat gliadins). The rate of accumulation of secalin in developing rye grain was at a maximum between 3 and 5 weeks after anthesis (the flowering period of a plant, from the opening of the flower bud).

The prolamin content in wheat, barley and rye constitute about 40% of the protein, whereas it comprises about 15% in oats.

Secalins are divided into four types: HMW (high molecular weight), γ -75, ω and γ -40 secalins. The monomeric γ-40 secalins account for about 24% of the total secalin fraction. While, monomeric ω-secalins account for about 17% of the total secalin fraction of rye. The other two:
*γ -75 secalins made up about 46% of the total secalins
*HMW secalins account for about 7% of the total secalins

Secalin is the major protein of the rye grain, but rye is not as suitable for bread making as wheat. Rye is not suitable for consumption by celiac patient. Celiac disease (CD) is a gluten-sensitive enteropathy that has a prevalence of 0.3–2.4% in most populations. The disease is triggered by ingestion of gluten, the proline-rich storage proteins of wheat, barley, and rye.

Cereal rye crop

Domesticated rye occurs in small quantities at a number of Neolithic sites in Turkey but is otherwise virtually absent from the archaeological record until the Bronze Age of Central Europe, circa 1800–1500 BCE. English and Dutch settlers brought cereal rye to the northeastern United States. Flour made from cereal rye is gluten free, which makes it an ideal flour for people with celiac disease.

Cereal rye is an erect annual grass with greenish blue, flat blades and an extensive fibrous root system. It resembles wheat, but usually is taller (3–5 ft) and tillers less.

Cereal rye performs well on light loams or sandy soils, and it will germinate even in quite dry soil. It also will grow in heavy clays and poorly drained soils, and many cultivars tolerate waterlogging.

It often grows in infertile soils where other cereal grains fail. Optimum soil pH is 5.0–7.0, but pH in the range of 4.5–8.0 is tolerated.
Cereal rye may be used as a cover crop, grain, hay, or pasture. Rye can also be grown as a cover crop. The green cover over the winter can help trap snow and retain soil moisture, keep living roots in the soil which keeps airways open and provides early-season ground cover.

It is one of the best cover crops where soil fertility is low and/or winter temperatures are extreme. Cereal rye is an excellent choice as a late-sown cover crop. As a cover crop, cereal rye can scavenge nitrogen, build soil, loosen topsoil (reduce compaction), prevent erosion, and suppress weeds. It can also be used as a livestock forage between cash crops.

Cereal rye can be grown as a grain crop for alcoholic beverages and food. Cereal rye is quite distinct from wheat for bread making; the dough lacks elasticity and gas retention properties.

Rye is a traditional raw material used for the production of bread in Northern and Eastern Europe. Poland, next to Russia, Germany, Ukraine, and Belarus, is a major producer of rye grain. Used alone, it produces a distinctive black bread. Lighter rye loaves are produced from rye and wheat mixtures.

Rolled rye or rye flakes

Rye flakes are produce just like rolled oats; rye berries are steamed, rolled and then finally dried.

The whole rye berry is a good grain, adding chewiness and nutritious value, to combine with rice. Rye flakes can be added to soups and stews or used as a cereal if soaked overnight. Rye flakes, like wheat and oat flakes, make good homemade granolas.
Cream of rye can be made by simmering 1 part grain and 4 parts water over low heat for 15 minutes.

Rye flour

Rye is a cereal grass that is second only to wheat on world popularity for bread baking. It has a storing, hearty flavor in bread and as a cereal.

Rye flour is commercially ground to a range of colors and particles sizes. It is a gluten containing flour, although it is lower in gluten than wheat. Commercial rye four generally with rye-flour from the centre of the endosperm; cream or light rye flour includes the next layer; and dark rye flour includes the outside of the endosperm.

Light rye: The lightest is nearly white. It has a very fine texture and high percentage of starch, with little protein.

Dark rye: Like clear flour milled from wheat, dark rye comes from the part of the rye grain closest to the bran. Thus, it is darker than other rye flours and has a lower percentage of fine starch particles.

Rye flour makes delicious robust bread. It does not however, respond favorably to commercial yeast, so some wheat flour must be added to dough to enable the yeast to develop. Typical formulas call for 25 to 40% rye flour and 60 to 75% hard wheat four.

Rye is a cereal grass that is second only to wheat in world popularity for bread baking. It has as strong hearty flavor in bread and as a cereal. Most rye is roller milled, though stone milling on the industrial scale was utilized for rye longer than for wheat into the 1920s in some countries.

Because rye is so hydroscopic, the gain requires less tempering before it is milled. Rye four is a gluten-containing flour although it is lower in gluten than wheat. Whole grain rye flour produces dense but very flavorful breads.

Rye flour is commercially ground to a range of colors and particles sizes and various nomenclature:
*White rye flour
Rye flour that consist only the center of the endosperm is known as white rye flour. Rye flour lacks many of the original nutrients found in the kernel. It is the rye flour with bran and germ removed. This flour is a good choice for these on low fiber diets.

*Light rye flour or cream
Inclusion of small traces of bran in white rye flour makes it into light rye flour or cream. The lightest is nearly white. It has very fine structure and high percentage of starch, with little protein.

*Medium rye flour
If more bran is included in the white rye flour, medium rye flour is obtained which has many of the original characteristics of the rye.

*Dark rye flour
Dark rye flour is sometimes also referred to as whole grain flour.  Dark rye comes from the part of the rye grain closest to the bran. Thus, it is darker than other rye flours and has lower percentage of fine starch particles.

*Rye meal
This is the best term for whole grain rye flour. Rye meal contains the bran, endosperm and germ of the original rye berry; it can be ground to fine, medium or coarse levels.

*Pumpernickel
Coarse, whole grain rye flour is known as pumpernickel. It is also the name of the traditional German bread.

Rye starch

Rye is another member of the wild grass family whose cultivation stretches back into antiquity.

Rye starch is contained in the grain of the rye, Secale cereal, Linn. It consist practically of large and small grains, with but few of intermediate size; the larger ones being, on the whole, somewhat larger than the corresponding ones of wheat.

Among the grains of medium and small size, hat-shaped and bell shaped ones are to be found; these are very seldom seen in wheat starch.

Industrial production of rye starch was carried out during World War II, but as soon as the supply of wheat, maize and potato starches returned to normal production ceased.

Rye starch has been tried as a gelling and thickening agent in the food industry and also in non-food applications.

Most of the structure provided by rye flour in bread comes from the interaction of its protein with pentosans and the gelatinization of its starch. Wheat flour in added in varying amounts to compensate for the gluten deficiency on rye.

Rye starch can be substituted for potato starch. A combination of rye starch and lipids has been used in desert mixes.

Short history of rye

The precise origin of rye domestication is unknown, but it was being cultivated at several locations in the Eastern Turkey and Armenia by 6000 BC.

The earliest sign of rye, associated with agriculture comes from central Anatolia. Rye is a typical ‘secondary crop’: it was primarily a weed in wheat and barley fields, later adopted as a crop.

Rye arrived in Europe through the Aegean Basin and the south Balkan as a cultivated crop by 4000 BC. Probably a cultivated crop in the Early Iron Age, is found in Roman Britain in both the highland and lowland zones, but not with great frequency.

Because of its tough constitution, it may have performed better than wheat and barley in the cooler, nutrient poor northern climates and therefore attracted human attraction.

It spread in the Roman Empire was a late phenomenon. In Sweden, the cultivation of rye increased in the Middle Ages, partly because it was favored by the Church and the Crown. However, it was restricted to the provinces Lake Malaren and the adjoining regions to the south east.

In modern times, tetraploid and hexaploid wheat have been artificially hybridized with rye to form the new crop called Triticale.

History of Rye

History of Rye
Rye is the fifth cereal in importance in the world and in the United States. It is exceeded in the world by corn, wheat, oats and rice.

Even though the grain was domesticated later than wheat, barley and its, there is more uncertainty about the history of rye than there is about some of the other cereal grains.

Some authorities believe it developed from Secale montanum Gus., a perennial weed that grows wild southern Europe and Central Asia.

It was probably was first grown as a separate crop (i.e., not in mix plantings) in southwestern Asia sometime around 1,000 BC.

It was never an important grain in this area in ancient times, but first appeared as a significant food crop in northern Europe. From there, cultivation of the grain spread southward throughout the continent and, after about the 16th century, across the southern part of Russia into Siberia.

During the Middle Ages, the poorer people of England ate bread made from rye, or from a mixture of rye and wheat, known as maslin.

It was unknown in the western hemisphere until it was brought to North America and to western South America by European settlers in the 16th and 17th centuries, and thence to the rest of South America, Australia, and South Africa.

There are three clearly defined species of rye:

  1. Secale cereal L., the cultivated species, which also exists as a highly diverse annual weed in farms in Iran, Afghanistan an Transcaspia;
  2. Secale montanum Gussh., an out-breeding, widely distributed assemblage of perennial races located from Morocco east through the Mediterranean countries to Iraq and Iran;
  3. Secale sylvestre Host., an annual in-breeder, which is widely distributed from Hungary to the steppes of southern Russia.

One additional taxon, Secale vavilovii Grossh., may be sufficiently unique to warrant species status.

Most authorities believe that S. cereale evolved from S. montanum Gush.

These two species are similar cytologically, but vary by two reciprocal translocations involving three pairs of chromosomes.

As with oats, rye developed as a secondary crop. It was probably picked up as a weed when the wheat-barley assemblage arrived in western Asia, where the native species are widely distributed.

Like the other grain species, agronomic traits, such as rachis fragility, ear branching and growth habit, are determined by only a few genes.
